Recipe for squash noodles with carrots

Here is a simple recipe for squash noodles with carrots:

Ingredients:

2 medium zucchini
2 carrots
200 g egg noodles
2 tablespoons soy sauce
1 tablespoon olive oil
2 garlic cloves, minced
1 teaspoon grated ginger
2 green onions, chopped (white and green parts separately)
1 teaspoon vinegar
1 teaspoon of sugar (optional)
Salt and pepper to taste
Sesame seeds and fresh green herbs for decoration (optional)

Instructions:

Slice the zucchini and carrots into thin noodles using a special grater or vegetable slicer.

Cook the egg noodles according to the instructions on the package, then flip them into a colander and rinse with cold water.

In a large frying pan, heat the olive oil over medium heat.

Add the garlic, ginger and the white part of the onion. Fry for about 1-2 minutes until fragrant.

Add the chopped zucchini and carrots to the pan. Cook for about 3-5 minutes, until the vegetables are soft but still crispy.

Add the egg noodles to the pan, then soy sauce, vinegar and sugar (optional). Mix all the ingredients.

Cook for another 2-3 minutes, until all the ingredients are warmed up.

Add salt and pepper to taste. Before serving, garnish the dish with green onion pieces, sesame seeds and fresh green herbs, if desired.
